5-8pc /lb Langoustines are a delicious species of cold-water prawn. Langoustines look like crawfish, but they are a smaller relative of the lobster, and equally prized for their sweet tail meat.
Whole langoustines may be boiled in heavily salted water for 3-4 minutes. Serve them with a side of aioli for dipping. To grill or broil langoustines, split them in half lengthwise and brush with butter. Langoustines can also be used for paella.
